主料：净雏鸭750克。猪肉30克。葱10克,姜10克,花椒5克,八角5克,桂皮5克,白糖20克,精盐5克,味精1克,绍酒21克,湿淀粉15克,芝麻油100克,花生油1500克。


四喜鸭子的特色：
鸭肉酥烂，口味醇厚浓郁，入口软烂不腻，富含营养，尤宜老年人食用。
四喜鸭子的做法：
净雏鸭由脊背处劈开，鸭脯相连，用刀根把大骨斩断，去掉鸭嘴内鸭舌，猪肉切成1.5厘米见方的丁，连同鸭子用酱油腌渍10分钟，捞出沥干，放入九成热（约225℃）油锅中，将鸭、猪肉块炸成棕红色捞出沥油，放砂锅内，把猪肉、葱段、姜块、花椒。八角、桂皮放在正面，清汤内加白糖、精盐、味精，绍酒搅匀倒入砂锅内，用慢火炖2小时至烂熟取出，皮卤朝上摆在大腰盘内，猪肉放在鸭子的四周。汆汤倒入锅内烧开，调好口味用湿淀粉勾成浓溜芡，加芝麻油浇在鸭子上即成。[/size]
